Salmon casero ahumado (paso a paso)



Ingredientes:

1 cola de salmon de 1,200kg.
250 gr. de sal
250 gr. de azucar
1 cucharada de eneldo

Preparacion:

1º Aqui los ingredientes, el salmon, una bandeja con rejilla y un paño de cocina de algodon y en el bol, la sal,el azucar y el eneldo ya mezclado.






2º Coloca en la bandeja con rejilla un paño dealgodon y encima la mitad de la mezcla de sal y poner el salmon y terminar con el resto de la mezcla.





3º Cubrir con el paño de poner peso encima y meter a la nevera.(yo puse leche)







4º A las 24 horas sacamos de la nevera, le quitamos el peso y como veis el salmon a absorvido la cantidad que necesitaba.






5º Lo he lavado para quitarle el exceso y lo dejo unas horitas en la bandeja para que se enjugue el agua.






6º Cortar con el cuchillo lo mas finamente posible, ir colocandolo en un tuper y cubrir con aceite de oliva y listo.

Nota se mantiene en la nevera con el aceite entre 2 y 3 meses. Siempre que no os lo comais antes como pasa en mi casa.

  4. Hola Andres, no tiene sabor ahumado, pero la mezcla entre la sal, azucar y eneldo con el salmon le da un sabor muy rico. Te recomiendo que lo prueves y deseo te guste.
